Just two more whole days until we open our Public Kitchen at 1801 Massachusetts Street Lawrence Kansas, July 23rd! This is a huge deal for my company Chef Lady Brown. We started the Smokin Shack last year the day after my birthday August 12th. Prior to building and opening the food trailer, we opened a dine in and Carry Out pop-up restaurant formerly known as Southern Poppy. It was a great experience, and an unexpected opportunity for my business. Due to a series of uncontrolled unfortunate events we had to close. This happened at the same exact time we were opening the food trailer The Smokin Shack. I seriously jumped into the food truck industry with never had even worked on one before. And let me tell you, the food truck industry is not for the faint-hearted. Going into this business my number one piece of advice to give is to never give up. If this is your dream and this is something you really want to do enjoy the process, even on the hardest days. That’s my new motto. It can get very discouraging at times and very costly. But I promise you, if you keep on going you will reap the benefits. Here we are a year later and my brand is taking off. We’ve grown so much over the last year, actually the last 6 months to be honest, that we are now opening a public kitchen again. I would be lying if I didn’t say I am scared to death. And at this point I think that’s a good thing. Being comfortable never equals growth and it’s time to step out of my comfort zone to reach the potential that I’m supposed to have on this Earth. With my brand I seriously hope to do some good in my community, to help others when I can and to teach people the process once Ive reached that worthy place in life. Heres to the next chaper… we only have two pages left.
